  • A signed nightly log and photographs of the kitchen floor and waste area, so the licensee holds evidence before an inspection rather than after one

Why it is scoped this way

Two things follow from putting the kitchen floor on the cleaning contract. The compliance items get attended to on a schedule with a signed record behind them, which is what an inspector is looking for. And closing staff go home earlier, which matters more than operators expect — kitchen hands leave over the hour after service as much as over the service itself. A bin enclosure with one named owner is also the single most effective pest control measure on this strip.
